Description || Generations ago winemakers in the south of France discovered that including a small portion of white grapes in a red ferment deepened the colour and added complexity to the nose. The Shiraz and Roussanne grapes in this wine were grown side by side, harvested and fermented together, then aged in a mixture of old French oak barriques before bottling. With all my wines I tread as lightly as I can in the vineyard and winery, letting the flavours of Tabilk ‘terrior’ shine through in the fruit.
Serving Suggestion || The splash of Roussanne adds a little perfume to the nose and silkiness to the palate, making it the perfect partner to a range of pork, veal, lamb dishes. Sustainably grown with minimal handling, this wine is vegan friendly.

‘Whatever Roussanne brings to the blend — aromatics? energy? texture? — long may it continue. Deep crimson hues. Lifted in scent with wild red fruits, plum, black cherry and vanilla. The palate is both juicy and textural, firmly wrapped in place by fine tannins. Such poise. A real beauty.’
